The days here in San Pedro just keep passing us by. It is hard to believe we will have been here for three months already at the end of next week. Boy how time flies when you are having fun....and rum!
Besides us being busy at The Snack Shack this past week, Rob and I had a few hours to head out with some friends at night and headed north again on our day off. There is a new bar and grill that just opened last weekend called Bayside. It is located on the lagoon side and not far from the airport. We learned about it from our friends, JR and Veronica. Being new business owners ourself, we are always up for supporting others.

Bayside had a great vibe on opening night, with loud music and the bar full of locals and tourists. Red Bull was sponsoring the event, and if you know me, you know I LOVE RED BULL!!!!! I have to admit, I have not had one since moving down here, so seeing everything with the emblem at the bar made me reminisce of some good times back in the states. And my mouth was beginning to salivate with the thought of my first sip in over three months. Rob bought me my first Jager Bomb since on the island....and it was beyond delicious. Thanks Rob!

And then I met a girl that was working the bar that night. I think she and I would make the funniest best friends ever......

I know it seems like all we do is go out and have fun, but I promise, we do work at The Shack every day, except Wednesdays. To prove it, here is a picture of Rob chopping his coconuts for the BBQ on Sundays. We have learned that if you burn the coconut husks first in the grill, then add minimum charcoal and lighter fluid, the grill stays hot, hot, hot for longer. And we save money on lighter fluid and charcoal! What beats using our natural resources....except when I am slammed at the bar and Rob is nowhere in sight. I then turn to find him shucking coconuts and shaving them down for the kids. I think he has found his new hobby.......

And then came WEDNESDAY.....
We had breakfast with our new landlords. Yes, we signed a lease at our new place we will call home beginning next Wednesday. We are beyond excited for this move and will share more information in the future.
I then convinced Rob to bike north again and hang out at Ak'bol. On our way, we ran into Rebecca, from sanpedroscoop.com, in town (best blog EVER in my opinion-she's got awesome information). She motioned us over to sign the petition for the "no offshore oil drilling" in Belize. I am glad we had a chance to help in sustaining the beauty of this island and country.
Ak'bol is a yoga retreat and eco resort north of the bridge. I wanted to try some place different that would be quiet and relaxing for the day. Ak'bol succeeded.
After we made it through the woodsy entrance and passed the pool, this is the first thing I set my eyes on. Yes....two lounge chairs in the water with nothing else around. I had my eyes on these the rest of the morning.
So we headed to the bar to grab a refreshment and then began to enjoy our day. Here are some of the pictures from Ak'bol. There are so many pictures I could have taken....

Rob and I then headed to the ocean. Remember that picture of those two chairs in the water.....
We put them to good use. It was one of the most relaxing times we have had since arriving in San Pedro.
And before we headed home, we decided to spend a few moments out under the palapa. I showed Rob my namaste.
So another great week in Belize for Rob and me. Like I said earlier, I cannot believe it has been almost three months for us here. We have met some amazing individuals and experienced things on a daily basis I have only dreamed about. Am I regretting making this decision to sell everything, quit my job, and move to a foreign country? I have to say no. I have no regrets. No doubts. No nerves. No reason to not believe we have made the right decision.
I have to say it is UNBELIZEABLE!
